When you are super busy and running around like a mad woman all the time, it is especially important that you be prepared! “If you fail to prepare, you prepare to fail.”
Cook your food in bulk on the weekend or a day where you have some spare time. It only takes me about an hour from start to finish to cook most of my food for the week. I cook my fish, broccoli, asparagus and whatever other veggies. Then I weigh everything and separate them into single serving portions in separate tupperware containers!!! So I’ll have 3-4 ounces of fish and 3 ounces of broccoli in each container! I store most of them in the freezer and about a day’s worth in the fridge.
That way in the morning before work, I can grab the meals from the fridge and go. No hassle, no worry, no problem! Then when I get home that night, I take out another day’s worth and put them in the fridge to thaw for the following day. It’s SO easy!
In addition to cooking in bulk, I also ALWAYS carry “emergency” food with me wherever I go! You never know if you are going to get a flat or wind up somewhere with NO healthy options. I usually have a packet of tuna and a single serving ziploc baggy of Almonds in my purse. Sometimes I will even carry an apple if I remember. That way I will never have to grab McDonald’s or run to the nearest vending machine!
I also recommend investing in a cooler. It doesn’t have to be a big chunky one! There are some super cute, flexible ones that look like purses! Target, Wal-Mart and Costco carry them! I use a six-pack brand cooler.. you can check them out here:
